The best time for hiking in Italy's northern mountains is the summer season. At this time of year the snow on the Dolomites has largely gone, you can enjoy alpine conditions and wonderful clear views. There are tracks for walkers and climbers of all abilities and "rifugio's" (shelters) to stay in along the way.
If you want to try something more coastal consider the famed Cinque Terre on the Ligurian coast south of Genova. You can base yourself in one of the five towns or nearby and take advantage of the excellent paths through the national park with their views of the blue mediterranean and the dry-wall vineyards.
